Fig & Almond Breakfast Bars

They say breakfast is the most important meal of the day, but it can also be the easiest to skip when you’re rushing off to work, school or wherever your schedule is taking you for the day. Prep these hearty bars ahead of time to provide the perfect hunger-busting on-the-go snack for yourself and your family. Packed with healthy, plant-based protein from nuts and seeds, it’s an ideal option to fuel up in the morning or after a workout.

INGREDIENTS

1 cup almonds (we used activated and dried)
⅓ cup chia seeds
1 cup dried coconut
1 tablespoon sesame seeds
1 ½ teaspoon cinnamon
Zest of ½ lemon
¼ cup Comvita™ Multiflora Honey
¼ cup tahini
¼ cup coconut oil, melted
¾ cup dried figs

METHOD

In a blender, mix ½ the chia seeds into a flour and place in a bowl with the remaining whole chia seeds, chopped almonds, sesame seeds, lemon zest, dried coconut and cinnamon. Pulse the almonds until roughly chopped and add to bowl.

Chop the figs into small, 3mm to 4mm pieces.

Place the honey, tahini and coconut oil in a bowl and mix until combined.

Now mix the honey and tahini mixture with the dry mixture until well combined. The mixture should be nice and sticky and hold together well. If it’s not, you can take ½ a cup of the mixture and blend it finer, then add it back to the mix.

Line a 15cm by 20cm tin with baking paper and spread the mixture out evenly. Place another piece of baking paper on and press down firmly, to ensure it’s packed well.

Place in the fridge for 1 hour until firm. Cut into small 2cm x 5cm bars and store in the fridge between sheets of baking paper for 2 to 3 weeks.
